They are mostly comprised of sugar and butter, so this is understandable. Here I have developed a delicious knockoff version of \u201csugar\u201d cookies, made with coconut flour and eggs. Orange zest and vanilla add extra flavor to these soft cookies that seem to melt in your mouth.<span id=\"more-2195\"><\/span><\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-full wp-image-2247 lazyloading\" src=\"http:\/\/paleogrubs.com\/wp-content\/uploads\/2014\/02\/glutenfreesugarcookies.jpg\" sizes=\"(max-width: 575px) 100vw, 575px\" srcset=\"http:\/\/paleogrubs.com\/wp-content\/uploads\/2014\/02\/glutenfreesugarcookies.jpg 575w, http:\/\/paleogrubs.com\/wp-content\/uploads\/2014\/02\/glutenfreesugarcookies-150x150.jpg 150w, http:\/\/paleogrubs.com\/wp-content\/uploads\/2014\/02\/glutenfreesugarcookies-300x300.jpg 300w, http:\/\/paleogrubs.com\/wp-content\/uploads\/2014\/02\/glutenfreesugarcookies-252x252.jpg 252w\" alt=\"World\u2019s Best Sugar Cookies- everyone I make these for LOVES them! They always ask for the recipe.\" width=\"575\" height=\"575\" data-was-processed=\"true\" \/><br \/>\nThe gluten free cookies in this recipe happen to be in the shape of hearts, for a certain holiday coming up in February (hence the pink frosting as well). But as like regular sugar cookies, these can be cut out into whatever shape you desire. It is a great recipe to keep on file for when the holidays roll around. Be it shapes of Santa or hearts or stars; these cookies will be a guaranteed hit.<\/p>\n<p>This recipe is a little more difficult than some other cookies because you actually have to roll out the dough between two sheets of parchment paper. I used white chocolate in order to achieve the pink look I wanted for the cookies, since their intended purpose was for a Valentine\u2019s party. (Some of the cookies didn\u2019t make it to the party because they were too good.) Since most people do not consider white chocolate Paleo, you can leave that part out of your recipe if you choose. There are many different kinds of Paleo frosting options that you can substitute instead.<\/p>\n<p><img loading=\"lazy\" class=\"alignnone size-full wp-image-2248 lazyloading\" src=\"http:\/\/paleogrubs.com\/wp-content\/uploads\/2014\/02\/paleosugarcookies.jpg\" sizes=\"(max-width: 575px) 100vw, 575px\" srcset=\"http:\/\/paleogrubs.com\/wp-content\/uploads\/2014\/02\/paleosugarcookies.jpg 575w, http:\/\/paleogrubs.com\/wp-content\/uploads\/2014\/02\/paleosugarcookies-300x191.jpg 300w\" alt=\"paleo sugar cookies\" width=\"575\" height=\"367\" data-was-processed=\"true\" \/><\/p>\n<p>I could not stop eating these delicious sweet cookies and I\u2019m betting neither will you. Just in time for that day in February to show someone an extra bit of love.<\/p>\n<div class=\"blog-yumprint-recipe blog-yumprint-standard   blog-yumprint-numbered-methods \"><img class=\"blog-yumprint-google-image\" src=\"http:\/\/paleogrubs.com\/wp-content\/uploads\/2014\/02\/glutenfreesugarcookies.jpg\" \/><\/p>\n<div class=\"blog-yumprint-photo-top\"><\/div>\n<\/div>\n<div class=\"blog-yumprint-spacer\"><\/div>\n<div class=\"blog-yumprint-recipe-contents\">\n<div class=\"blog-yumprint-ingredient-section\">\n<div class=\"blog-yumprint-subheader\">Ingredients<\/div>\n<ol class=\"blog-yumprint-ingredients\">\n<li class=\"blog-yumprint-ingredient-item\">1\/3 cup coconut oil, melted and cooled slightly<\/li>\n<li class=\"blog-yumprint-ingredient-item\">3 eggs<\/li>\n<li class=\"blog-yumprint-ingredient-item\">1\/4 cup honey<\/li>\n<li class=\"blog-yumprint-ingredient-item\">3\/4 cup coconut flour<\/li>\n<li class=\"blog-yumprint-ingredient-item\">1 tsp baking soda<\/li>\n<li class=\"blog-yumprint-ingredient-item\">Orange zest from half an orange<\/li>\n<li class=\"blog-yumprint-ingredient-item\">1\/4 tsp vanilla extract<\/li>\n<\/ol>\n<\/div>\n<div class=\"blog-yumprint-ingredient-section\">\n<div class=\"blog-yumprint-subheader\">For the frosting<\/div>\n<ol class=\"blog-yumprint-ingredients\">\n<li class=\"blog-yumprint-ingredient-item\">3\/4 cup white chocolate chips<\/li>\n<li class=\"blog-yumprint-ingredient-item\">2 tbsp coconut oil<\/li>\n<li class=\"blog-yumprint-ingredient-item\">1\/3 cup pureed strawberries<\/li>\n<\/ol>\n<\/div>\n<div class=\"blog-yumprint-method-section\">\n<div class=\"blog-yumprint-subheader\">Instructions<\/div>\n<ol class=\"blog-yumprint-methods\">\n<li class=\"blog-yumprint-method-item\">In a medium bowl, mix the coconut oil, eggs, and honey together with a hand mixer. Mix in the orange zest and vanilla. Add in the coconut flour and baking soda and stir with a spatula. Place the dough in the refrigerator to harden for one hour.<\/li>\n<li class=\"blog-yumprint-method-item\">Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Roll out the chilled dough between two sheets of parchment paper to 1\/4-inch thick. Cut out shapes with a cookie cutter and transfer to the baking sheet. Repeat with remaining dough. Bake for 10-12 minutes until golden. Let cool on a wire rack.<\/li>\n<li class=\"blog-yumprint-method-item\">To make the frosting, melt the chocolate and coconut oil in the microwave, stirring regularly. Remove from the microwave and slowly mix in the pureed strawberries until desired color is achieved.
