Bruschetta Shrimp Ravioli

Bruschetta Shrimp Ravioli is a fresh cheese ravioli that gets a tasty makeover with roasted pepper bruschetta, shrimp, capers and crisp bacon. The result? A perfect meal for date nights, dinner parties, or a fast weeknight treat.
INGREDIENTS
- 1 lb. fresh cheese ravioli
- 4 tablespoons DeLallo Extra Virgin Olive Oil
- 4 tablespoons butter
- ½ large onion, diced
- 1 tablespoon DeLallo Minced Garlic in Oil
- 5 strips thick cut bacon, diced
- 1 (4-ounce) jar DeLallo Nonpareil Capers in Brine
- 1 jalapeno, minced (optional)
- 1 (7.05-ounce) jar DeLallo Roasted Pepper Bruschetta
- 1 lb. uncooked red shrimp, cleaned, peeled and deveined
- Bunch fresh chives, chopped
DIRECTIONS
- Bring a large pot of salted water to a boil. Add ravioli and cook according to the package directions. Drain and set aside.
- Heat oil and butter in a large heavy-bottomed skillet. Add onion and garlic and cook until aromatic, about 3-4 minutes.
- Add bacon, capers and jalapeno to the skillet and sauté until bacon renders and becomes crisp, about 10-12 minutes.
- Add bruschetta and shrimp to the skillet. Continue cooking for about 3 minutes, until shrimp is translucent and cooked through. Add ravioli to the shrimp mixture, stir gently to combine, and serve with chopped chives.
